Bread Layer
- 1 large loaf bolillo or French bread, cut into thick slices
- 3–4 tbsp butter or oil (for toasting)
Syrup (Piloncillo Syrup)
- 2 cups water
- 1 ½ cups piloncillo (or brown sugar)
- 1 cinnamon stick
- 3 whole cloves
- 1–2 star anise (optional)
Filling & Toppings
- 1 cup raisins
- 1 cup dried apricots or prunes (optional)
- 1 cup chopped pecans or walnuts
- 1 cup shredded cheese (queso fresco, mild cheddar, or mozzarella)
- 1/2 cup peanuts (optional)
- 1/4 cup candied fruit (optional)
