Ingredients

Bread Layer

  • 1 large loaf bolillo or French bread, cut into thick slices
  • 3–4 tbsp butter or oil (for toasting)

Syrup (Piloncillo Syrup)

  • 2 cups water
  • 1 ½ cups piloncillo (or brown sugar)
  • 1 cinnamon stick
  • 3 whole cloves
  • 1–2 star anise (optional)

Filling & Toppings

  • 1 cup raisins
  • 1 cup dried apricots or prunes (optional)
  • 1 cup chopped pecans or walnuts
  • 1 cup shredded cheese (queso fresco, mild cheddar, or mozzarella)
  • 1/2 cup peanuts (optional)
  • 1/4 cup candied fruit (optional)
